Pork and chives dumplings (healthy recipes)






A while ago I made Ha Gow/Shrimp dumplings and I’m very pleased by the result of the thin transparent skins. The chives in our front yard is bushing like no other’s business. They have such pretty purple blooms too. So, I thought, what the heck, let’t make more dumplings. One can’t have too many dumplings in life, especially this particular “one”. This is the same technique with different fillings. The challenging part in making this type of dumplings is to get the skin as thin as possible. When they are steamed, you can almost see the content inside wrapped by this transparent skin.






Pork and chives dumplings(28-32 dumplings)
What you will need:
  • 1¼ cups (150 g) wheat starch
  • ¼ cup (30 g) tapioca flour
  • 1 cup (240 ml) boiling water
  • 1 tsp of oil
Filling:
  • 1 lb of lean ground pork
  • 1 lb of fresh chives (cut off the about1-2 inch at the bottom and chopped into 1-inch pieces)
  • 3 cloves garlic (minced)
  • 1 Tbsp oyster sauce
  • Dash of white pepper
  • 1 Tbsp of corn starch
Instructions:
Preparing the filling:
  1. Place all ingredients for filling in a medium-size mixing bowl and stir to mix everything. Let them chill in the refrigerator while you prepare the wrappers
Making the wrapper:
  1. Mix the wheat starch and tapioca starch into the mixing bowl and pour the boiling water into the bowl and stir with a spoon, when cool enough to handle, use your hand to knead into a dough
  2. Place the dough on a slightly greased surface and let it stand for 1 minute
  3. Add the oil and knead again until the dough is soft. Divide the dough into 4 pieces and roll them into long strips. Cut each strips into 8 equal portion of dough and you will get 32 small doughs
  4. Please refer to the short clip below on how you can wrap
  5. Place about ½ to 1 Tbsp of the filling in the middle of the dough. Fold the two edge together to form half circle
  6. Brush each dumplings with some oil and steam for 5 – 7 minutes or until the skin is transparent. Let them stand for about 1 minute before serving them hot
